Ingredients:

1 large head of broccoli, cut into florets

1 large head of cauliflower, cut into florets

2 tablespoons olive oil

Salt and pepper, to taste

2 tablespoons butter

2 cloves garlic, minced

3 tablespoons all-purpose flour

2 cups milk

1/2 cup cream

1 teaspoon mustard powder

1/2 teaspoon paprika

1 cup grated cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs

Fresh parsley, chopped, for garnish

Instructions:

Preheat the Oven:

Preheat your oven to 400°F (200°C). Grease a large baking dish with some butter or non-stick spray.

Prepare the Vegetables:

Toss the broccoli and cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 20 minutes, or until they are just tender and start to brown.

Make the Cheese Sauce:

In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for a minute. Stir in the flour and cook for another minute. Gradually whisk in the milk and cream, avoiding lumps. Add mustard powder and paprika. Continue cooking until the sauce thickens.

Combine the Ingredients:

Remove the vegetables from the oven and reduce the temperature to 375°F (190°C). Layer half of the vegetables in the prepared baking dish. Pour half of the cheese sauce over the vegetables, then sprinkle half of the cheddar and Parmesan cheese. Repeat with the remaining vegetables, sauce, and cheese.

Add the Topping:

Mix breadcrumbs with a little melted butter and sprinkle over the top of the gratin.

Bake the Gratin:

Bake in the oven for 25-30 minutes, or until the top is golden brown and crispy.

Garnish and Serve:

Let the gratin cool slightly before sprinkling chopped parsley over the top for a fresh, herbal note.

Conclusion: This Cheesy Broccoli and Cauliflower Gratin is more than just a side dish; it’s a show-stopping comfort food that brings warmth and joy to any meal. With its creamy layers and a satisfying crunch, it’s sure to win over everyone at the table. Enjoy this luxurious blend of vegetables and cheese as the perfect complement to your main dishes.
